These are hands down the best vegan chocolate chip cookies. It took looking at multiple recipes, trying them, mixing them and tweaking different ingredients to get the perfect combo to make soft, yet slightly with an outer crisp to them. You have to like a subtle coconut flavor, which I LOVE! The best thing is, I will make a double batch and then freeze half… making a few cookies here and there so that I do not OVERindulge. 😊 Warm cookies are my weakness!! – L

Ingredients

- 1/4 cup of full fat coconut milk (or any nut milk will do)
- 1 package (10 ounces) of Enjoy Life Foods Semi Sweet Dark Chocolate Chips
- 1/2 cup of solid coconut oil
- 1/4 cup of applesauce
- 1 1/4 cups of all purpose flour
- 1/2 tsp of fine sea salt
- 2/3 cup of brown sugar
- 2/3 cup of white sugar
- 1 tsp of baking soda
Instructions

- Preheat oven to 375 degrees F.
- Mix dry ingredients together- flour, salt, sugar and baking soda.
- Mix wet ingredients together- coconut oil, coconut milk, applesauce
- Add dry ingredients to wet a little bit at a time.
- Then add in chocolate chips
- Chill in freezer for 15 minutes
- using cookie scooper, place 1 inch scoops on cookie pan
- Bake for 10-12 minutes
- Let cool before eating.
